Hawaiian-Curry Fusion Burgers

    **Ingredients:**

    **For the Curry-Aioli**

    * 1 cup Mayonnaise
    * 2 cloves garlic finely minced
    * 3 tbsp red curry powder can substitute for yellow curry powder
    * 1 tsp paprika optional
    * ½ lemon juiced
    * ½ tsp salt
    * ½ tsp pepper

    **For the Burger:**

    * 4 burger patties make your own with this recipe
    * 4 slices cored pineapple fresh or from a can
    * 1 red onion
    * 4 leaves lettuce butter or another sweet leaf lettuce is good
    * 4 buns

    **Instructions:**

    **Make the Curry-Garlic Aioli**

    1. Add all the ingredients to a medium sized mixing bowl and mix together well with a small whisk or a fork.
    2. Cover and refrigerate for at least 30 minutes, or while you cook the burgers.
    Note: This can be made well in advance – up to 5 days before.

    **Burger Preparation**

    1. Preheat your grill to a medium-high heat.
    2. Core and slice the pineapple, if not already done. Thinly slice the onions and prepare the lettuce leaves.
    3. Add patties to the hot grill. Cook for approximately 4 minutes per side, turning once. Internal temperature should reach 160℉.
    4. Halfway through the burgers cooking, add the pineapple slices to the grill. Cook and turn once to heat through and leave nice appetizing grill marks.
    5. Butter and toast the buns for approximately 1 minute, or until desired crispiness is reached.
    6. Assemble the burgers: Spread some curry-garlic aioli on the top and bottom of the bun. Add the burger patty to the bottom bun followed by the grilled pineapple, red onion and lettuce.
    Add the top bun and serve!
