Caramelized onion with anchovy on puff pastry. Holy shit that’s great.
In general caramelizing a bunch of onion will reduce it like crazy and it freezes great. (just portion it out)

Another option: caramelize it, deglaze with Madeira (or the booze of your choice), add cream, take it off the heat and add grated cheese. Layer on flatbread, add more cheese, broil until melted and bubbly.
