If you grill them, the smaller end pieces are more well done so you can let people choose the doneness they prefer.

Tri-tip is my favorite meat, I’ve been cooking it almost weekly for years. But honestly, I think it’s better at medium. It’s one of the few cuts of beef that I feel that way about. I wouldn’t be mad if it was medium rare either.

You can also try thin slicing it cold the next day. Imo better than when it’s warm or thick cut.

I like to pan roast this bad boy in the oven, get a real nice char on the outside from my rub, then run it on the slicer after it rests and chills. It makes a bomb French dip

Medium is great for this. I’ve tried medium rare and it gets a bit too chewy.
Next time, just make two and get the thicker one to medium rare. The thinner one will be medium, and the tips closer to done. Everybody is happy.
Make sure to use a cutting board with gutters so you can pour all the juice back over the meat.

At what temp did you pull it from the smoker? I made a tri-tip over the weekend and pulled it at 125f. It looked and tasted amazing at that temp but it was still a bit chewy.

Tri tip is good between med rare and medium for me. Same with lamb. Medium rare and below don’t allow the marbling to melt. It’s a little more tender if you’re closer to medium.
