    First, cut the tomatoes across their “equator” rather than north-to-south.

    Scoop out the snot and seeds.

    Then you can slice and dice only tomato meat as small as you like.

    Buy firm Roma tomatoes. Use a sharp knife

    Using firm but ripe tomatoes and a sharp knife, cut off large “cheek” pieces and remove the seeds and liquidy parts and discard. Cut the cheeks into thin strips, then line up a few of the strips together skin down and slice finely across to get small square pieces. It is fiddly and takes patience but it’s worth it for the beautiful and tasty results.

    I worked at Chipotle! I can tell you how we did this.

    1. Order pre cut tomatoes.

    That’s it. But the real secret is taking all of the ingredients like cilantro, onion, and lime juice, and mixing it up before adding to the tomatoes. Then salt and mix it all up together. This makes sure the lime coats the cilantro and you get both flavors. Same with the rice, cilantro and lime in the bowl, mix. Then add rice and then salt. Mix with a spatula with a cutting motion to keep from smashing the rice.
