Then beat the eggs and coat the eggplant in the egg. – Over high heat, cook the onions and garlic until soft. Add eggplant and the remainder of the eggs. Cook on both sides until ready – Eat over rice with banana ketchup.

Here to confirm that this crazy good. Gotta add some Magic Sarap for full authenticity though (well not really b/c fish sauce is already pretty authentic and definitely delivering the umami kick but if you don’t have fish sauce or don’t wanna use it, msg will do)

I have this often! I oven roast the eggplant and I usually have it with hot sauce rather than banana ketchup but that’s just my taste.
