My Breakfast: Day 1169
Well, it’s barely been a month since Chilaquiles last appeared.But that’s what I woke up wanting.So that’s what you end up seeing.
I have come to love Chilaquiles, but that love didn’t come until I moved to SoCal from NYC.
Now they vie with Huevos Rancheros, Chile Rellenos, and Breakfast Burritos, as my fave breakfasts.They are quick, easy, and delicious.
You can make them as spicy or not as you like.
You can zhuzh them up with eggs, chicken, pork, tofu, or any other protein you like.
You can make them crunchy or soft or right in the middle.
You can fry up your own corn tortillas or used bagged tortilla chips.
It’s a super-simple dish to make once you have the basic ingredients ready.
All you’ve got to do is heat up some salsa, jarred or canned or homemade, in a pan, fold in your chips, and top it all with your chosen garnishes.
Today mine included:Sour Cream. Chopped Cilantro. Queso Fresco. Diced Red Onions. Guacamole. Topped with a Frizzled Egg.
But don’t bother taking notes. There’s a real good chance I’ll be posting Chilaquiles again before the end of June.
