Gochujang Arribata Pasta

    ### Ingredients

    **Pasta**

    * 1 tbsp olive oil
    * 2 red onions
    * 2 garlic cloves
    * 2 tbsp tomato purée
    * 2 tbsp gochujang paste
    * 100ml pasta water
    * 250ml oat cream
    * 500g pasta
    * 15g nutritional yeast
    * 10g coriander
    * salt
    * pepper & sugar – to taste

    **To Serve**

    * 1 lime

    ### Instructions

    **Before You Start**

    Kettle boiled | Large stock pot | High sided frying pan

    **Prepare the ingredients**

    1. Peel and finely dice the red onions and garlic

    **Cook the pasta**

    1. Cook the pasta according to package instructions in a large pot of boiling salted water – the more water the better (approx 9 minutes)

    **Prepare the sauce**

    1. Warm the olive oil in the pan over medium heat
    2. Add the red onions and a small pinch of salt to the pan and stir for 5-10 minutes until soft
    3. Add the garlic and stir for 2 minutes
    4. Add the tomato purée and gochujang to the pan and stir for 2 minutes
    5. Scoop the pasta water out of the stock pot, transfer to the pasta water, stir to combine and simmer for 1 minute
    6. Pour the oat cream into the pan, add the nutritional yeast and stir to combine and simmer for 1 minute
    7. Taste the sauce and season to perfection with salt, pepper and sugar

    **Finish and serve**

    1. Pick the coriander leaves and finely slice
    2. Drain the pasta, add to the sauce and fold to cover and coat
    3. Transfer the pasta to serving bowls, garnish with coriander, pepper, a squeeze of lime juice, nutritional yeast and serve immediately

    I’d try it but I’d cry in poor spending so much on a very iffy sounding maybe meal

    It looks good in the pan, but the in the bowl shot looks really thick & gloopy. Also weird color.

    I do the same with gochujang cream sauce. Didn’t think this would be controversial based on the response.

    Directions: Add onions to pan, cook for 5-10 minutes. Then add garlic and cook for 2 minutes.

    Video: Add onions and garlic to pan and cook at the same time.

    Lovely. I didn’t even see the oat cream being added, unless they added that at the same time as the pasta water, which also goes against the directions.

    genuine question- what is the deal with nutritional yeast? I see it in every single vegan/vegetarian recipe (including just like.. shaking it onto salads). What is it being used for/to substitute that makes it such a staple for non animal products cooking? Is it an umami boosting flavor? I haven’t tried it before and the idea of using yeast in non baking applications is confusing to me but it’s not like baking yeast…right?
