In our house we call this eggplant parmigiana. Add some fresh basil and a big pinch of fresh mozzarella.
What the hell? And they are allowed to bitch about pineaple on pizza after this?

This was my keto go to when I needed pizza.
Sometimes I do this with zucchini for a quick vegetable-focused dinner. I almost always have extra zucchini in the fridge.
I guess Italians really do know how to pizza-fy anything! Can’t wait to try it out myself.
If only there was a way for me to get Sal Vulcano to see this Joe DeRosa would be furious. Eggplant is sooooo good.
