Olive Oil (drizzle over everything and on pan to reduce stickage)
Seasoning: Salt, Pepper, dried Garlic mix
I was scrolling the other day and saw someone suggest a sheet pan dinner for a quick dinner. I decided to prep the veggies last night from left overs and throw in some shrimp as well. Baked at 350 for 15 minutes. Paired this with a salad and it has been a great dinner.

Looks great! Do you roasted veggies freeze well? I usually roast and then eat within 1-2 days from the fridge, but I’m thinking of doing larger-volume roasts and freezing for meal prep
