    Pico is simple and great. I don’t individually like tomatoes and onion by themselves, but somehow in pico, I love it.

    The main difference in process I do differently from this recipe is that I soak the onion/jalapeno in lime for a while beforehand.

    I always cover and refrigerate a couple hours before serving to let the lime work, but follow the same basic recipe and its great!

  4. Is this a basic guacamole recipe, minus the avocado?
