Decided to age french sardines after a trip in Portugal last summer. It’s hard to wait 5 years !

French sardines 2019, 2020, 2021, 2022 (la quiberonnaise, la compagnie bretonne, la belle isloise, jean burel)
Then some Pinhais from Portugal
Then Spanish ones (paco lafuente, Ortiz, Real conservera espanola)
