Had a great dinner at Terroir in Lisbon the other night, which got included in the Guide Michelin just this year I’d I’m not mistaken. You go into their tasting menu completely blind, as they don’t tell you anything about the current menu other than letting you choose between 5 or 8 moments (both available as vegetarian options, too).

After previously having been let down by this concept of going in blind (Carte Blanche in Frankfurt, Germany), we were both very pleasantly surprised by just how well the menu at terroir flowed into each other, as well as how openly the staff communicated with us, which dishes were staples and which were in a bit of a testing phase. Funnily enough, the one that was the newest was our personal highlight: the “moment from the sea” seemed like a very wild mix of different seafoods at first glance and the aroma of the aged tuna sauce was room filling, but man, what a taste explosion this was in your mouth. Like an oyster cranked up to 100. Very memorable dish for me.

The rest was more a bit more safe, but still thoroughly enjoyable, the tuna bread, bacalao and petit fours (which were rolled out and introduced by the pattisier herself in a wooden cart that looked straight out of an evil dead movie) being especially impressive.

Also want to mention the amazingly friendly and attentive service. I just love restaurants where the staff seems to have fun and even find the time to joke around with you.

Wine list is almost 95% Portuguese, but had a great Alvarinho from Soalheiro for an amazing price.

Definitely recommended, if you want to try something a bit more casual in Lisbon.
