    ### Ingredients

    * 1 red onion, diced
    * 4 garlic cloves, roughly chopped
    * Thumb sized ginger, roughly chopped
    * 2 spring onions, sliced
    * 1 tbsp coconut oil
    * 1 tsp all spice
    * 1 tsp salt
    * 1/2 tsp pepper
    * 3-4 stalks fresh thyme
    * 1 scotch bonnet, keep it whole this is for flavor
    * Liquid from can of kidney beans
    * 1 cup veg stock
    * 2 cups rice, please wash it until it runs clear
    * Kidney beans from the can
    * 1/2 cup coconut milk

    ### Instructions

    1. Add the rice into a bowl with water and wash the rice, repeat this until it runs clear.
    2. Heat up a on medium heat. Add the onions, garlic, ginger and mix for 1-2 mins.
    3. Add the spring onion, seasoning, herbs, scotch bonnet, kidney beans water and veg stock. Allow to simmer for 5mins.
    4. Add the rice, beans and coconut milk. Place some parchment paper on top then the lid. Allow to cook for approx 35mins until nice and fluffy. Enjoy

    I never knew that rice & peas was kidney beans, I had always visualised it as rice with garden peas, the green ones!
