A sushi focused tasting course by Neo inside clothing store, Glass Cypress. Each reservation time is only 12 seats, and it is a total of 16 courses with optional add-ons. It also comes with sparkling wine and sake pairing with the option to BYOB as well.
Highlights were the Kamapchi (2), Masu (4), Maguro Kama (10), Iberico Pork Shoulder (14), and Roasted Banana Ice Cream (18).
The Kampachi had a fried chip made with a bunch of tiny fish fried together. Gave the dish some texture and saltiness to balance out the ponzu.
The Masu tasted exactly like a lox bagel but in nigiri form. A very interesting take on nigiri.
The Maguro Kama was the butteriest piece of fish ever and slightly charred with a binchotan coal.
The Iberian Pork Shoulder very tender and paired well with the strong garlic flavor from the creamed ramps.
The Roasted Banana Ice Cream was an add-on but completely worth it. The caviar ironically pairs really well with the banana, and the bottom had flash frozen banana crumble that added a great crunch.
