How to cook Air Fryer Fries: Twice-Cooked

    Using an air fryer, we’re going to create crispy, golden fries that are soft on the inside and perfectly crunchy on the outside. These fries are seasoned with garlic, salt, and fresh rosemary, turning an everyday side dish into something truly special.

    Ingredients:

    – Fresh rosemary
    – 5 to 6 medium-sized potatoes
    – ½ tsp Garlic powder
    – 1 tsp Salt
    – ½ tbsp Oil
    – Your favorite dipping sauce for serving

    Step 1: Preparing the Rosemary

    Start by finely chopping some fresh rosemary. This aromatic herb will be used to season our fries after they’re cooked, adding a delightful, gourmet touch.

    Step 2: Preparing the Potatoes

    Next, peel your potatoes and slice them into fry-sized strips. Cut them longways first, then again longways. Put your prepared potatoes into a bowl.

    Step 3: Seasoning the Potatoes

    Now, add the garlic powder, salt, and oil to the bowl and mix everything together. This seasoning will give our fries a savory, slightly garlicky flavor that’s perfectly balanced with the fresh rosemary added later.

    Step 4: First Round of Air Frying

    Place the seasoned potatoes in the air fryer. Set the temperature to 170 degrees Celsius (340 degrees Fahrenheit) and cook for 15 minutes. Remember to shake the fries halfway through to ensure even cooking. This is the first step of our twice-cooked method, which will give the fries their soft interior.

    Step 5: Second Round of Air Frying

    After 15 minutes, the fries should be soft and break in half easily. Shake them again and return them to the air fryer. This time, set the temperature to 195 degrees Celsius (385 degrees Fahrenheit) and cook for an additional 10 minutes. Shake them halfway through again. This second round of cooking is what gives the fries their irresistible crispy exterior.

    Step 6: Final Seasoning and Serving

    Once your fries are done, transfer them to a bowl and season them with the chopped rosemary and an extra pinch of salt. Serve them immediately with your favorite dipping sauce. The result? Perfectly cooked fries that are soft on the inside, crispy on the outside, and absolutely bursting with flavor.

    I brine mine first in saltwater and vinegar. Let them soak overnight. The flavour is much better.

    You can also get pretty adventurous with the brine – instead of saltwater, you could use chicken stock for example, or leftover pickle juice from the jar… I never throw away pickle juice. It’s great for all sorts of stuff. My current go to is soaking chicken breast in pickle juice, then breading and air frying.

    If you want crispy on the outside, you should soak the sliced potatoes in water first for maybe an hour.

    I will not be peeling my potatoes though. They’re much better with the skin on.
