Found a long-forgotten bag of grocery-store-bought russet potatoes on top of my fridge, and noticed this guy already turning into a full blown plant. I’d read a bit about growing potatoes in the past, never attempted it or really intended to– until now. I just wanted to be sure it’s safe to plant this potato even though I have absolutely no idea how long it’s been sitting around (best guess, around a month? In a dark, overly air-conditioned kitchen, I have NO idea how this managed to grow)

    We call those ‘closet sprouts’ and of course you plant them! By the time you harvest, the original potato will be long gone but you should hopefully have a number of brand new taters to enjoy.

    My potatoes are always ones that sprout such as this. I purposely let some go “bad” after the holidays. I then put the eyes that are growing in a plate of water. When the ground is ready I plant them.. been doing them that way my entire life. Have a bumper crop this year.
