Had 12 doughs ready for a 4th of July party and my plans fell through unfortunately., Decided I’d double up my doughs (originally for Neoplatonism style) and make some pizza in my home oven. Took my Ooni Karu stone and used it in my home oven, came out great! Recipe is the last pic 🙂

About the Dough

Poolish was 799g KABF, 799g Cold Water, 1g yeast
Fermented 12 hours at Room Temperature
Then Mixed into 1198g Caputo 00
499g Cold Water
59g Yeast (62 looked like a scary amount so i undershot just a bit, came out great)
0.5 yeast (ady)
Let rest for 2-3 till it doubled in size and I formed 12 280g dough balls
Cold Fermented for another 24 hours (was supposed to be used the 4th so I cut it short, would’ve been CT 36+ initial 12hr poolish RT)

Baked on a 500f stone , bout 9min, quick 2 min broil at the end to brown cheese and warm up the cold ricotta
