A fridge staple 🥰

  1. Something I must keep in my fridge at all times! I’ll either have this alone if needing a light salad, or toss in chickpeas and quinoa if needing something more substantial ^_^

    1 pepper, 1/4 red onion, 1 cup tomatoes, 1 cup cucumber, 1/2 cup parsley, 1tbs olive oil, pinch of salt, 2tbs lemon and toss! I typically like to add in some mint & black pepper but I ran out this week.
