Whole emmer farro, prepped ahead-of-time in an Instant Pot with these delicious black beans I buy from a local market. Charred corn (seared in a little avocado oil with tajin and smoked paprika), cherry tomatoes, green onions. Instead of sour cream, went for Greek yogurt mixed with lime juice and zest. Dessert was two figs with a bit of goat cheese sprinkled on. Delicious and FILLING! I needed this fairly high-protein meal because I worked out hard this morning including lifting weights. I try to combine a Mediterranean and French diet/way of eating, with the French approach of 3 meals per day with no snacking in between, but where lunch and dinner have their own “courses” with fruit typically as dessert. And I get to eat a croissant every now and then 🥐 😄
