Tofu Korma

    ### Ingredients

    * 1 pack firm tofu
    * 1 can chickpeas, drained
    * 4 cloves garlic
    * Thumb sized piece of ginger
    * 1 onion
    * Coriander + their stalks
    * 1 tbsp cumin seeds or ground cumin
    * 1/2 tsp cinnamon
    * 80g ground almonds
    * 2 tbsp tomato purée
    * 1 can coconut milk
    * 1 tbsp nut butter

    ### Instructions

    1. Sauté onion with salt until caramelizing.
    2. Add the coriander stalks, ginger, garlic and spices, cook down for 2 mins more. Then add the tomato purée, almonds, coconut milk and nut butter.
    3. Simmer for 5 mins, then crumble in the firm tofu with your hands.
    4. Add chickpeas, cook for 10 mins for the flavors to absorb.
    5. Serve with rice and/or naan
