Chop ends off, shredd, freeze in zipoc bags, use midwinter to make zucchini bread

I like to dice mine up and add them to the other veggies for lo mein. So good! Zucchini bread is also great.

When they get that size or bigger, I like to slice them into “steaks” about half an inch thick bread, them, and fry them

Boats. Precook the meat and veggies scoop out the inside and bake. These babies will tender up and be delicious. Serve over rice or grains. I usually let a few go on purpose for this as I can never find them in store

Zucchini cakes- grated zucchini and bisquick, parmesan cheese and green onion. Fry like a pancake

Sliced lengthwise, then breaded and fried. Zoodles. If you don’t have a spirelizer, just make a long pas on a cheese grater. Make zucchini pancakes. Like potato pancakes.

I like to slice them up in easy to munch spear sections and do refrigerator pickles like a cuke.

My favorite is dill, but if you like a sweet pickle go for it.

I cut them into chunks, steam them, process them, then freeze into portions I can add to pasta sauce or soups
