Tempeh Noodle Salad

    ### Ingredients

    * 400g tempeh
    * 1 tbsp sesame oil
    * 2 tbsp chunky peanut butter
    * 1 tbsp soy sauce
    * 1 tbsp lemon juice
    * 1 1/2 tbsp maple syrup
    * Splash hot water
    * Glass noodles (rehydrate with hot water)
    * 2 tbsp sweet chill sauce
    * 2 tbsp peanut oil
    * 1 tbsp lemon juice
    * Salt n pepper
    * 1 garlic clove, minced
    * 1 tsp ginger, grated
    * Baby sweetcorn, thinly sliced
    * Tenderstem broccoli
    * Green beans, ends chopped
    * 1/2 red pepper, thinly sliced
    * Handful beansprouts
    * Fresh coriander and fresh chili.

    ### Instructions

    1. Make the marinade with sesame oil, peanut butter, soy sauce, lemon juice, maple syrup and hot water. Add the tempeh and marinate.
    2. When ready to cook preheat the oven to 180° and bake for 20 minutes.
    3. Add the noodles to a heat prove dish and pour hot water over it, after 5 mins drain and rinse to with cold water.
    4. Make the dressing with sweet chili, lemon juice, peanut oil and salt n pepper.
    5. In a pan, fry up the veg and once done, add to the noodles with the tempeh, dressing and toss together. Top with some coriander and chill and enjoy!
