Ingredients – 250 g spaghetti – 8-10 cloves of garlic, finely chopped – handfull of parsley, finely chopped – about 10 large shrimps – 2-3 ts capers – 0,5 dl extra virgin olive oil(0.25 cup) – 1,5 tbs butter – pinch of chili flakes – salt and pepper to taste Method 1. Pat the shrimp dry with a paper towl. This is important to get the nice colour and flavour on the shrimps 2. Ad a couple of tbs your olive oil in a flaming hot pan. Ad your shrimps and let them cook about a minute on each side. Season with chili flakes and a small pinch of salt. Let them rest on a plate. You want them to get a nice colour without cooking all the way through at this stage. 3. Boil the pasta two minutes shy of package instructions in salted water(about 1,5 tbs salt for a couple of litres of water) 4. Meanwhile ad the rest of your olive oil in the pan and let the garlic sizzle a few minute on medium heat until just starting to get brown on the edges. 5. Ad capers and half a cup of pasta water. 6. A minute before the pasta is ready you ad the shrimp and half the parsley to the pan. 7. Drain the pasta but save 2,5 dl of the pasta water(a cup). 8. Ad the pasta to the pan with half the pasta water and stir over high heat for a minute. 9. Ad the butter, take it of the heat and mix. 10. Ad more pasta water if it looks to dry and taste for seasoning.
