Thank you to another member here who posted this recipe: https://skinnyspatula.com/easy-green-lentil-halloumi-curry/ I made it with red bell peppers, yellow onions, canned diced tomatoes, frozen peas, and halloumi. I’ve previously not been a huge fan of lentils, however I’ve really been enjoying French Le Puy lentils, which have a chewier texture! This paired wonderfully with whole emmer farro and some plain Greek yogurt for some acidic contrast!
