Tomato & paprika chickpeas!

  1. Love it as a side, or even turned into soup by adding some vegetable stock 🙂

    1/4 red onion, sliced

    1 stalk celery, diced

    1 tomato, grated

    1 can chickpeas

    2-3 cloves garlic, roughly chopped

    3-4 twigs parsley, roughly chopped

    salt

    pepper

    1/2 tsp cumin

    1 tsp paprika

    bit of lemon juice

    1-2 tbs olive oil

    saute onion on medium-high for 2 mins

    add celery, garlic, and seasonings, saute for 2 mins

    add grated tomato and chickpeas, simmer on low for 5 mins

    turn off heat and stir in parsley and lemon juice

    Looks good but where do the chickpeas fit in? Is it 1 can? TIA.
