Black Mole with Sous Vide Duck Breast

    This is my 3rd attempt at Mole Negro, a very tedious process. It was a lot of work and I learn new things each time. This is a work in progress, but still delicious.

    Some notes:

    * The hue was more of a dark brown than the jet black I experienced when visiting Oaxaca. I don’t think I toasted the chiles enough (I was scared of letting them char, the chihuacles I had were on the brittle side)
    * Along those same lines, there was a smokey, not-quite-bourbon barrel-like characteristic in the moles I ate in Oaxaca that I haven’t achieved. My guesses either go back to the chile-charring or maybe the fact that I used an electric stove instead of a wood-fired comal
    * The only I chocolate I had was semi-sweet bakers chocolate. I liked that this let the chiles shine more, but I needed to add a bunch of sugar to make the sauce really pop
    * I know that duck isn’t traditional, but I had the breast, so I just went for it. I ended up searing it in lard, and in my humble opinion I think it went well with this sauce
    * I know that black mole isn’t served with sesame seeds, but I wanted to make it pop for Instagram 😛

    That seems like a lot of mole for a little duck. Given the time it takes to make, it’s any of it getting wasted?

    It looks very nice, next tine try it with red rice and some tortillas de maíz and chicken instead of duck, it’s god cabron

    It looks nice, however i have my doubts about the protein, since turkey or chicken breast is used since it has a bland flavor that doesn’t get overkill with all the mole flavors
