Looks delicious! I made her recipe for my uncle’s birthday and let’s just say it was hard work! It was my first time cracking open coconuts and I definitely struggled. But, and I think you’ll agree, the end result was all worth it!

Just FYI, if you guys need fresh coconut meat (shredded), Indian grocery stores have frozen shredded fresh coconut that would work. It’s a popular ingredient for South Indian dishes. Also saves you guys a ton of work! 😊

Your cake looks good. Reminds me of those ol’ big southern fresh coconut cakes the southern ladies of my youth would bake; not the prettiest but oh boy did they taste good. I remember helping my mama break that whole fresh coconut by placing a nail in one of the coconut eyes and hitting it with daddy’s hammer. She would let us drink the fresh coconut water. What fond memories…
