Claire Saffitz’s “All Coconut Cake.” My goodness was this fussy to make! 6 layers of coconut cake with coconut pastry cream & fresh coconut between, covered in cream cheese frosting & toasted coconut flakes 🥥

Looks like it was worth it though!

Looks delicious! I made her recipe for my uncle’s birthday and let’s just say it was hard work! It was my first time cracking open coconuts and I definitely struggled. But, and I think you’ll agree, the end result was all worth it!

If I made this it would involve an ER visit after injuring myself grievously getting the coconut open. Gorgeous cake! Was it worth the effort taste wise?

  4. It looks like you put a ton of work into it and it’s stunning!

Just FYI, if you guys need fresh coconut meat (shredded), Indian grocery stores have frozen shredded fresh coconut that would work. It’s a popular ingredient for South Indian dishes. Also saves you guys a ton of work! 😊

My hat is off to you!! This sort of makes German, Austrian and Hungarian confections sound easy!! At least you weren’t asked to grow the coconuts!

Was it worth the time and effort, though? For me, that’s the critical factor.

Yes…fresh coconut (or I guess frozen too) would be a MUST for this cake!.

I bet it was tasty! Worth the effort I’m sure:))

Your cake looks good. Reminds me of those ol’ big southern fresh coconut cakes the southern ladies of my youth would bake; not the prettiest but oh boy did they taste good. I remember helping my mama break that whole fresh coconut by placing a nail in one of the coconut eyes and hitting it with daddy’s hammer. She would let us drink the fresh coconut water. What fond memories…
