Jollof Rice & Peas

    ### Ingredients

    * a big splash of veg oil
    * 1 white onion
    * 1 large red onion
    * 3 tbsp tomato paste
    * 6 garlic cloves
    * 1/4 inch ginger
    * 2 scotch bonnet
    * 4 large tomatoes
    * 2 bell pepper
    * 1 tsp cumin
    * 1/2 tsp paprika
    * 1 tsp onion powder
    * 1 tsp garlic powder
    * 1 tsp all spice
    * 1 cube stock
    * 1/2 can coconut milk
    * 1 can kidney beans
    * 2 cups basmati rice
    * fresh thyme
    * few bay leaves
    * salt to taste

    ### Instructions

    1. Fry the white onion in a big splash of oil for around 10 minutes on a medium heat, until golden and almost crispy. Add the tomato paste and cook down for another 5 minutes.
    2. Blend the red onion, garlic, ginger, bell pepper, tomatoes and scotch bonnet then add to the pot along with the dried spices, fresh herbs, and stock then simmer for 20 minutes.
    3. Add coconut milk, washed rice, kidney beans and spring onion (we forgot to add) then mix, cover with parchment paper and lid then simmer on the lowest heat for 25 minutes.
    4. Stir then recover and cook for another 25 minutes.
    5. Take off of the heat and leave to steam for another 10/20 minutes, serve hot and enjoy!
