Quick meal tonight. Used the electric kettle to boil water, which I then used to boil the noodles. While they were boiling, I sliced the African eggplant in my potato slicer. Salted them, added red pepper flakes, and put them in the air fryer at 400f. Avocado oil and 1T of butter fried the sliced garlic, and then the thawed langostinos were added. By the time the noodles were cooked, the eggplant was crispy. Next time, we’re gonna cook waaay more eggplant, because they disappeared!
