Lovely. I've made similar things (Mollie Katzen, my cookery goddess). Wondering what you think of the more casual version where you make the filling then crumple several sheets of filo and put them on top and spray with oil, so you have a flowery puff of filo instead of an orderly pie top.
I am looking for more Mediterranean food preparation and enjoyed the visual with sound off while someone was sleeping but my stomach was queasy watching knifework while not watching finger positions!

I wish I had it! My Grandma had a skillet that was at least 15 inches acrossed. They had 6 kids and she could cook xfor all of them in thaat big skillet! Then when we came along! She cooked for all the grandkids in it! She was love just love!

Question: I try not to add salt to most of my cooking. I have high BP and diabetes. I do use salted butter (my one splurge and it’s usually less expensive). I know it can impact some recipes. Is there a rule of thumb that tells you when you absolutely must use salt? Also, how much of a difference would using 1% milk instead of cream make. Thanks! P.S. I love the extra garlic😂
The perfect pan for this would be the All Clad “Mother of all Pans” pan and it’s a 6 quart and 11 inches wide. VERY comically large and perfect for large batch cooking!

I use a potato ricer to squeeze the water out of the spinach. Smaller batches works best. Looks yummy!😊

This looks delicious! I love spinach and Spanakopita, sadly I can no longer eat spinach (too hard on the kidneys), is there a way to make this with another similar leafy green like turnip greens or collard greens? I know it won't be exactly the same, but close enough is fine by me. Any advice is appreciated, please and thank you 🙂

I enjoyed this very much. I've forgotten how easy it is to make! My version has a little lemon in it, some mint with the parsley (not much) and a bit of parm, which I think helps it hold together better when using frozen spinach. Here is where I veer way off the path and I'm sure people are cringing. Instead of brushing butter, I use an oil spray (butter flavored). Before I score, I'll brush on real butter. It goes so fast this way and still tastes great.

Thank you for helping me through my first time with this recipe! The result was excellent and deemed delicious by my dinner guests. Admittedly, I did not add the salt with the eggs with lacking effect, and I would back off some on the garlic, the taste of which lasted long into the next day.
