Literally I eat this for every other meal – it is just SO GOOD!!!
Super quick, really light but extremely filling!
Perfect for when I’m getting in late and not wanting anything heavy before I go to bed.

For the salad:
I use mixed lettuce leaves and baby spinach (just whatever greens you’ve got really) as the base.
You can pick whatever herbs you want but I find Basil, Mint, Parsley and Coriander to be super delicious.
Roughly chop (so that you aren’t getting massive hits of just one herb) and sprinkle on top.
Grab a little bit of spanish onion and dice it up really finely. I also pop in a little spring onion.
Get a cucumber and finely slice in quarters.
Gently toss to distribute it all around.

For the dressing:
Squeeze a lemon.
Season with salt/pepper.
Add in a drizzle olive oil.
Add in a spoonful wholegrain mustard (can use dijon).
Add in a spoonful honey.

Mix together, taste and adjust where needed.
Pour on top of the salad.

Top with sesame seeds (can also add nuts if desired)
AND THATS IT!!!!!!
Super fresh and tasty!! But so damn good!

  1. I've been wondering for so long if anyone mixes so many herbs together. The only combinations I've seen are parsley and mint or parsley and basil. Thank you for the video. That looked so good. I'm going to give it a try
