When I cook beef tongue I find it takes a really long time, even in a pressure cooker it takes about 2.5 hours to properly cook it. I find the idea of braising it in a smoker really fascinating, probably it is possible to fix the rubbery texture with correct method.

Tongue benefits from a long and slow braise. I think if you apply the same idea to smoking, you can smoke it like a butt to make it pull apart.

nevermind – what temp did you cook it to? When i braise mine i cook them forever, turns into the best pot roast you’ve ever had. maybe undercooked?
