What you need: egg yolks, black pepper, salt, pasta water, guanciale (or bacon), spaghetti & pecorino romano
1. Cook guanciale until crisp 2. Cook pasta Al dente 3. Mix yolk and cheese 4. Combine pasta and guanciale with some pasta water until creamy 5. Add creamy yolk mixture. Careful no scramble 6. Serve with generous seasoning of black pepper
