İçli kötfe is a traditional Turkish dish and it is very common in Southeastern Anatolia. It being very light is a great meal, especially for spice lovers. The unique combination of spices, minced meat and walnuts is truly a unique flavor worth trying.

Here is all you need to know to make delicious içli köftes:

Soak the bulgur and semolina in a bowl with a lid, cover and leave to rest for about 30 minutes.

Take 200 grams of vegetable oil into a pot and roast minced meat, while stirring constantly, until its color changes.

After all parts of the ground beef are browned, add half a tea glass of lukewarm water and roast until the water is absorbed.

After straining its juice, add the diced onion and continue to roast.

When the onions are completely roasted, add 2 teaspoons of salt and spices.

Add the walnuts and turn off the stove. Add the parsley, mix it for the last time and put it in another bowl to cool.

Take the bulgur mixture, which we left to swell and raise by absorbing the water, into a tray or a bowl and add vegetable oil, tomato paste, flour, egg, chili pepper and 2 teaspoons of salt and knead it well.

After kneading it for about 15 minutes, combine all the dough and cover with a damp cloth. Let it rest for about 30 minutes.

Take small pieces of dough and shape them into small bowls with your thumb or index finger, then fill them with the mixture and close.

If you are not able to open it in your hand, you can put the dough between baking paper and spread it in large sizes, then those could be put into pastry molds.

Those delicious lumps may be boiled or deep fried afterwards.
