Ingredients: eggs, parmesan cheese grated, potatoes thinly sliced into cubes, onion finely chopped, salt and black pepper, olive oil
Step 1. Thinly slice and dice potatoes and fry them up in a large oven proof fry pan with finely diced onion and seasoning. In a bowl whisk up the eggs with Parmesan cheese. When potatoes are golden in colour tip out excess oil and pour egg mixture over potatoes and onions and slightly mix ingredients together. Let the frittata set on a low flame until it has set and cooked on bottom then pop the pan under the grill so to set the top of the frittata until it’s a golden colour.
