Hey guys, I decided yesterday that I will follow this diet but I’m still very very lost on what portions and how much vegetables is actually enough. I’m not trying to lose weight, I’m just trying to regulate my blood glucose levels to prevent any spikes. Is this dinner ok? (The basmati rice portion will be eaten in half.)

    I sprinkled some olive oil on the cucumbers and tomatoes. Is that enough fat for this meal?

    Looks like a decent start! Love salmon. next time try experimenting with more/different veg and also swap the basmati for whole grain rice if you are trying to regulate your glucose – it has a lower glycemic index so will cause less of a spike. With veg try and get loads of different colours in there (eat the rainbow etc). Re fat yep this is probably good.

    Proportions look about right. A good rule of thumb is to visually split your plate. Half should be vegetables and fruit, a quarter should be grains and about a quarter should be the protein source. This can vary depending on the exact ingredients but signs serve as an easy visual guideline.

    Fat is a good way to stay satiated, in this case there is fat in the salmon and the added olive oil. If you feel like the meal is not leaving you satisfied for long enough, you can try increasing it a bit either by adding a bit of avocado or nuts.

    As the other commenter said, you should try to swap the white rice for a whole grain such as brown rice.
