    Ingredients

    ▢1 yellow onion diced

    ▢4 cloves garlic minced

    ▢4 stalks celery diced

    ▢2 carrots diced

    ▢1 cup red lentils

    ▢1 cup green lentils

    ▢1 can coconut milk

    ▢1 can diced tomatoes

    ▢3 cups vegetable broth

    ▢1 tbsp turmeric

    ▢1/2 tsp ginger powder

    ▢2 tsp dried oregano

    ▢1 tsp dried thyme

    ▢1 tsp salt

    ▢1/2 tsp pepper

    ▢2 cups spinach chopped

    Instructions

    **Sauté & Spice**: Heat olive oil in the Instant Pot on SAUTÉ mode. Add diced onions, garlic, carrots, celery, thyme, ginger powder, salt, and pepper. Sauté until onions soften and spices release their aroma (about 5 mins).

    **Add Lentils**: Stir in red and green lentils until coated with sautéed mixture.

    **Liquid Magic:** Add diced tomatoes, coconut milk, and vegetable broth. Stir well.

    **Pressure Cook**: Seal the Instant Pot, set it to high-pressure mode, and cook for 10 minutes (allow 10-15 mins for pressure buildup).

    **Natural Release**: Let the Instant Pot naturally release pressure for 10 minutes, then perform a quick release.

    **Creamy Option**: Optionally, blend 1 cup of soup for creaminess, then return it to the pot.

    **Spinach Magic**: Stir in chopped spinach; it will wilt from the soup’s heat.

    **Taste & Serve**: Adjust seasonings, serve hot with fresh bread, and garnish with parsley and Parmesan if desired.
