Moroccan Fish and Couscous

    Ingredients:

    • 6 fish fillets

    • 2 bell peppers

    • 1 garlic

    • minced garlic

    • 2 carrots

    • 5 green spicy peppers

    • hummus beans

    • fresh coriander

    • 1 lemon

    • sweet Moroccan paprika

    • spicy paprika

    • turmeric

    • salt

    • pepper

    • olive oil

    Instructions:

    • squeeze lemon on each filet

    • let them sit for 20 min then wash, and in the meantime:

    ——————————–

    • medium fire

    • 3.5 oil Tbsp, 14 garlic cloves, halved green pepper without seeds

    • 3 minutes mixing

    • 1 Tbsp sweet paprika

    • 1/2 Tbsp spicy paprika

    • 1/2 tsp turmeric

    • salt

    • pepper

    • 3 minutes mixing

    • sliced bell peppers and carrot (1-2 inch sticks)

    • mid/high fire

    • 10 minutes mixing

    • hummus beans

    • 5 minutes mixing

    • add water until almost covered and 75% of coriander

    • small fire

    • 30 minutes covered

    • mixing occasionally, making sure water is not missing

    • in the meantime:

    • wash fish and dry

    in a mixer:

    ◦ 25% of coriander

    ◦ 2.5 oil Tbsp

    ◦ 1 Tbsp sweet paprika

    ◦ 1 Tbsp minced garlic

    ◦ salt

    ◦ pepper

    ◦ warm water 0.5 cup

    ◦ mix

    • add fish to pan (spreading equally)

    • wait 10 minutes

    • pour mixer shake on fish

    • wait 15 minutes

    • 5 more minutes with lid open to help water evaporate
