Mixed whole grains cooked with water in a rice cooker. Yellow squash, lotus root, and chicken thigh marinated in miso, soy sauce, garlic, smoked paprika and toasted sesame oil, cooked in the air fryer the roast setting at 400f for 23 minutes. Topped with black sesame seeds.

    The sesame oil is technically not on point diet-wise, but added a really nice flavor. Feel free to leave it out or sub with some olive oil.
