Novice vegan cook here – how could I recreate these Thai ‘meatballs’ that my local supermarket discontinued? Not sure how to substitute ‘wheat protein’..

    I’m confused. Are you trying to duplicate the meatballs or are you trying to come up with a wheat-free version?

    Wheat protein is often sold under the same “vital wheat gluten”

    If you want to sub out the protein, you could try mixing protein powder with a polysaccharide binder like xanthan or agar

    Probably vital wheat gluten, available in specialty flour section of many grocery stores. Those small bags like Bob Mills or the serve yourself bins in co-ops like Outpost (that store is regional but every urban area seems to have one of those stores that smells like hippies)

    It’s just pure gluten. If you’re looking for it on its own, it’ll be labeled as seitan or vital wheat gluten (the latter takes more steps to turn into a meat substitute whereas seitan is pretty straightforward to cook right out of the package).

    Vital wheat gluten- you can always purchase it via Amazon if you’re in a rural place. People use “Anthony’s Vital wheat gluten”. You can also get methyl cellulose which will be important to give it that meatball texture.
    It’s mainly water and all different flours and spices along with soy beans. If you’ve never made a fake meat before, combine all the dry ingredients in one bowl. Whisk to combine then add in the water. This looks pretty straight forward. When I try to recreate a recipe I don’t expect it to be perfect the first time! Maybe 10x attempts later. Good luck!

    i use textured vegetable protein to make my meatballs, it will be different than wheat protein but you just soak the granules to rehydrate and use them as the base for flavors and usually add some flour or breadcrumbs to help them stick together.

    As far as I know that’s just wheat gluten (what we call seitan). It can be bought in many stores, at least where I’m from
