Today’s recipe is very special Yayla Corbasi. This is very famous Turkish soup. This soup serves as an appetiser. The richness of this soup also helps to improve the digestive system. It is quintessential taste of traditional Turkish cuisine. It is easy to make, by adding some rice into a soup mixture made from yoghurt, flour, lemon and egg yolk. Finally, dried mint is combined with hot oil and butter, bringing out the full feast of the soup’s flavours! Its lightness is widely enjoyed during both summer and winter.

Ingredients
Water 1.5 lt
Rice ½ cup (any variety)
Plain yogurt 400g
Egg yolk 1
All purpose flour 1 tbsp
Lemon (juice) ½ tbsp
Butter 40 g
Oil 1 tbsp
Dried mint 1 tbsp
Salt to taste
Black pepper 1 tsp (optional)
