* Soba noodles for 2 * 1 head of broccoli, sliced through the stems * 1 block of firm smoked tofu, sliced * Tamari for searing the tofu
**Sauce**
* 3 heaped tbsp peanut butter * Thumb sized piece of grated ginger * 2 garlic cloves * 1.5 tbsp soy sauce / tamari * 2 tbsp rice vinegar/ mirin * 1 tbsp agave * 1 tbsp sesame oil * 2-3 tbsp warm water, more if needed to blend to a smooth pourable consistency
**To serve**
* Fresh chili * Sesame seeds * Fresh coriander
###Instructions
1. Blend all the sauce ingredients together to a smooth, pourable consistency. Add more water if you need to.
1. Cook noodles according to packet instructions. Rinse in cold water and add a little sesame oil to stop them from sticking.
1. Cut the broccoli down the stem and sear it in a non stick or griddle pan with a little oil and salt until golden and charring around the edges Should take 5-7 mins. Remove and set aside. Fry the tofu in the same pan with a little sesame oil and drizzle of tamari until golden and sizzling. Set aside.
