I’ve been experimenting with reverse searing lately, tried it last night on a smaller roast.

I cooked in the oven until 122° internal, then I did the sear on cast iron with oil, butter and garlic cloves.

Personally, I’ve been aiming for this level of cookedness for a while and am very happy with it, but I also know many people do not like they’re meat this rare.

I’m having friends over next weekend and want to cook this again, but I wanted the community opinion – would the average person consider this Rare, Blue, or still alive?

    The ends will probably be medium rare, but the center is rare by definition. Cool red center

    That is an absolutely beautiful looking rare steak. The very centre of the right hand piece is blue, but for a steak to be correctly cooked ‘blue’ there would be this non ‘set’ protein structure for a larger percentage of the cross section. A proper blue steak, at least in France would be closer to what you would expect from a tataki preparation-seared hard on the outside, but with the majority of the interior at around or just above body temperature.

  6. Depends on who your friends are. There are a lot of people who would freak out over any bit of pink in the meat and demand it be well done

    I went to my steak house and this is what they served as medium rare.

    My opinion is let it rest after the first cook completely. Min 20 min. 30 is best.

    Then do your sear. Because you clearly weren’t patient enough to let it rest and cut into it and it peaked a damn river out.

    122° plus a sear is solid medium rare. Pictures mean nothing due to saturation and colors just not looking correct.
