243 calorie version of Olive Garden’s Zuppa Toscana. Made with plant based sausage, potato, onion and spinach

    For two servings:

    2 Big Mountain Spinach and Feta links

    1 Tbsp vegan butter

    126 g onion

    1 clove garlic, minced

    2 cups of broth made from Better than Bouillon No-chicken base

    141 g potatoes

    10 g vegan cashew based yogurt

    29 g spinach

    11 g Louisville “Bacon” bits

    salt and pepper to taste

    Instructions: pan fry links and onion, microwave potato (cut into bite size pieces). Add broth to soup pan, add in potato, garlic and onion and butter. To make creamy – heat and then take out some of the broth mixture with potatoes and puree with a tbsp of cashew yogurt. Put that back in and add in everything else.

    Bread (not included in calories and only partly visible in pic) was from walmart and surprisingly not high calorie. The two pieces totaled 130 cals.
