Ingredients
• 4 red peppers
• 1 large onion
• 3 Tablespoons olive oil
• 2 fat or 3 medium garlic cloves
• ½ tablespoon red wine vinegar
• 1 teaspoon salt
• ½ teaspoon black pepper
• ½ teaspoon dried thyme (OPTIONAL)
METHOD
1. Preheat the oven to 200C / 400F.
2. Line a large baking tray with parchment paper and set aside.
3. Cut the peppers into quarters and remove the seeds.
4. Peel and roughly chop the onions into large chunks
5. Place the peppers, onions and remaining ingredients and mix so the onions and peppers are thoroughly coated. Use only 2 tablespoons of olive oil at this point.
6. Spread the bell peppers and onions evenly on the tray
8. Bake for 15-20 minutes then flip the peppers over.
9. Bake for a further 15-20, until the peppers begin to brown.
10. Remove from oven and set aside to cool.
11. Place all ingredients – including the oil from the pan – into a food processor. Blend for a couple of minutes and add the last tablespoon of oil. Blend until totally smooth.
Have this with warm pitta bread. Enjoy 🙂 x
