  2. I made these but with a twist of adding a small splash of bourbon into my vanilla sugar. Let it rest for up to a week and when I took a bite just… dayum!

  3. I think the best part of this for me is the moist kitchen towel used both as a bowl holder and as an anti-ramekin-sliding device.

    Perhaps you could use an offset spatula as a helper to get those ramekins safely free of the bain-marie?
