Got it in a mystery bag at a farmers market. How do I use it?

    Kinda looks like a collard green which can be stirfried!

    Looks like collard greens. You can cut them up raw and put them in salad, or you can sauté them with a bit of onion and garlic. Delish!

    Collard greens. You can use them as you would Kale, but one of my favourite ways is to wrap a burger in it. It’s a bit peppery which lends well to meat/tofu/beans

    Collards. Here’s my recipe for “Curried collards and potatoes”. Serves 4.

    2 lg bunches of collard greens

    5 medium potatoes

    3-4 Tbsp butter or ghee (45-60ml)

    1/2 tsp whole black mustard seeds (2.5ml) or panch phoran spice mix

    1 medium onion, minced

    1/4 tsp curry powder

    2 garlic cloves, minced

    1/2 tsp garam masala powder

    1/2 tsp tumeric

    salt to taste

    Clean collards, de-stem, and shred collard leaves; make sure they’re dry.

    Peel and cube your potatoes. Boil the potatoes about 10 minutes, until tender but not mushy. Rinse in cold water, drain well. In a heavy skillet, heat butter/ghee to medium and add mustard seed/spice mix. Stir, then add onion, garlic, curry powder, garam masala, and tumeric, and a couple of pinches of sea salt. Stir for 1-2 minutes on medium heat. Add collards and potatoes; stir throughly, cover, then cook 5-10 minutes on medium-low, stir periodically to keep things from sticking to the pan. Remove from heat and serve.

    They’re also sturdy enough to wrap meat and/or rice to bake.

    Left over pot roast, wrapped in collard greens with a vodka sauce it’s very yummy.

    Collards. You want to get WAY more than you think you need, because they cook down to nothing. Strip the thick center stems out and cook the remainder of the leaves, and wash them well to remove soil. Cook with ham hocks.

    You can do stuffed collard greens. And they are delicious.

    I just made southern (US) -style greens yesterday. Half collard / half turnip greens, with ham hock and onion. Delicious with peas (purple hull) and rice.

    Collard. I like to fold in half, cut the stem out of the center, roll the leaves and thick chiffonade. Cook low/slow with some chunk bacon. So good.

    Yes I agree with the others, it is Collard Green, high nutrients and low calories.

    I never remove the stem in the middle like so many people recommend. I eat the whole collard leaf.

    You can also use the really large collard green as a wrap. Put in whatever you might put in a sandwich. They’re actually quite good and a healthy alternative to a tortilla.
