Peanut Lime Charred Cabbage Salad

  1. ###Ingredients

    * 2 tbsp avocado or olive oil
    * 3 cloves garlic, thinly sliced
    * 1 lb head of cabbage
    * 3 scallions, roots trimmed
    * Zest and juice of 1 lime
    * 4 tsp toasted sesame oil
    * 1 Fresno pepper, diced
    * 1/3 cup cilantro, stems removed and minced
    * 1 tbsp maple syrup
    * 1 1/2 cups frozen edamame, thawed
    * 1/4 cup roasted peanuts, chopped
    * Cooked rice
    * Kosher salt

    **Peanut Ginger Sauce**

    * 4 tbsp peanut butter
    * 1 tbsp tamari
    * 1 tbsp rice wine vinegar
    * 2-3 tsp maple syrup
    * 1/2 tsp garlic powder
    * 1/2 tsp ground ginger

    ###Instructions

    1. Remove the outer leaves of cabbage then cut in half through the core to keep the wedges intact. Cut each half into 2-3 wedges depending on the thickness of the cabbage.

    1. Add the oil to a heavy bottom pan over medium heat. Once hot, add the garlic and sauté for 1-2 mins until golden then transfer to a dish and set aside.

    1. Place the cabbage wedges in the pan cut side down in the oil and allow to sear undisturbed for 8 mins each side or until well charred on all sides. Sprinkle generously with salt then remove from heat and allow to rest.

    1. Add the scallions to the pan to sear for 1-2 mins on both sides then transfer to a cutting board and thinly slice.
    When the cabbage cools slightly, remove the cores and roughly chop. Transfer to a large mixing bowl with lime zest and juice along with 2 tsp of sesame oil and another pinch of salt. Using your hands, scrunch and massage the cabbage with the dressing. Add the scallions, pepper, cilantro, and maple syrup, then toss again to combine.

    1. To a separate bowl, stir the remaining 2 tsp sesame oil with edamame together.

    1. To another bowl add the peanut sauce ingredients and stir until thickened. Whisk in 3-4 tbsp water until smooth (adjust with more water as needed).

    1. To assemble, portion out rice, top with some cabbage, top with a few garlic chips, edamame, and peanuts. Drizzle with the peanut sauce and enjoy.

    Looks great! But can i just say how confusing these gifs are where the text doesn’t necessarily match with whats happening in the video? Its like you have to watch twice. Once to read the text and once to watch whats happening in the video.
