I also had half a bunch of parsley. So it turned into a remix of chimichurri (https://www.loveandlemons.com/chimichurri-sauce/ ) with some bonus spices (Trader Joe’s sofrito mix). I am usually lazy and blend it as well. For ease. So it could be more like another sauce.

Bonus photo – a salad from the other day with radicchio, pistachios, apples, and avocado. Lemon, grapefruit balsamic, and olive oil to dress it.
