Jamaican Stew Peas

  1. ###Ingredients

    * 2 cups kidney beans
    * 1 low sodium vegetable stock cup
    * 3 cloves garlic, crushed
    * 1 onion, chopped
    * 6 cups of water
    * 1 tsp of fresh ginger, grated
    * 2 spring onions, chopped
    * 2 stalks fresh thyme
    * 1 scotch-bonnet
    * ½ tsp allspice
    * 1 tsp all purpose
    * 1 tsp crunchy black pepper
    * Salt to taste
    * 1 can coconut milk
    * 2 corn on cobs, grilled/baked (optional)
    * 2 oyster mushrooms grilled/baked (optional)

    **Spinners**

    * 1 cups spelt flour
    * ½ tsp salt
    * ¼ cup water

    ###Instructions

    1. Soak the kidney beans overnight.
    1. Add the kidney beans to a large pot along with the water, vegetable stock, garlic and the onion. Bring to a boil and then turn the heat down to simmer for an hour until the beans are soft.
    1. Add all the spices, spring onions, fresh ginger, thyme and scotch-bonnet. (careful to not burst the scotch-bonnet if heat is not your thing)
    1. Make the spinners by mixing the flour water and salt into a dough.
    1. Add spinners by rolling a coin sized piece at a time between your hands. Then add the coconut milk to the pot and let it simmer for a further 30 mins.
    1. Remove the scotch-bonnet and add mix in the mushrooms and corn. Serve with rice or as a soup and garnish with fresh carrots!

  2. Next time I would suggest just cutting the corn off the cob and putting that into the recipe. I’ve always found corn ribs incredibly annoying to deal with, especially something like this that isn’t meant to be eaten with your hands

    But I count at least 4 types of seasoning being added during the cook?

  4. Beans take longer to boil. I think they need to go first for 1 hour and after that add the rest
